I’ve always been a picky eater. As a kid, I was known as a picky eater at school, church, and at home. Eating was hard for me because I almost never “liked” what was being served. And trying something new? Forget it!
Fast forward a decade or two, I’m much less picky. Meeting and marrying my eat-anything husband was a game changer. A combination of not wanting him to think I was weird, and him encouraging me to try new things expanded the list of foods I’ll eat.

Early on in our marriage, he confronted me about not eating healthy enough. Especially since we were planning to start having children in a few years, he wanted me to be as healthy I could be.
I read about sneaky ways to eat greens and developed a recipe for a green smoothie. It actually isn’t green at all and tastes nothing like kale. All you can taste is the berries and orange juice. It satisfies my sweet tooth and gives me a boost of nutrition that I was lacking.

Now that I am a mother, I want my children to eat healthy food. My first son ate really well for a couple years, then I started seeing my picky eating traits in him. Now at 4 years old, he is very picky. His diet is mostly fruit and bread. 99% of the time he refuses to eat meat.

Luckily my smoothie is one thing he has NEVER turned down. In fact, if I go more than a day without making it, he will BEG me for a smoothie. Both of my boys love their smoothies. Below you’ll see the straw cups they use to drink their smoothies. They are actually surprisingly easy to clean despite the built in straw and my kids love them!

To make these smoothies easily every day, every 2-3 weeks I get the berries, kale, spinach, and almonds to make smoothie bags. I decided to make a separate post to show how I make these bags. It’s super easy and I can make 15-20 bags in 30 minutes or less!

Purple Kale & Spinach Smoothie

Ingredients

1 Apple
1 banana
1 handful kale
1 handful spinach
3-4 cups orange juice
1 cup frozen berry blend
4 large frozen strawberries
1 handful of raw almonds
1/4 cup plain Greek yogurt
*Anything else you would like to add

Directions

Add everything in your blender. I like to put the not frozen stuff in first so the blender has an easier time getting through it all. Banana, apple, and yogurt in first then I dump in the smoothie bag with everything else before pouring the orange juice in last. My Blendtec Blender has a smoothie setting, so I use that to blend it all up! It’s best served immediately, but we have kept it for up to two days in the fridge. Just make sure you shake it or re-blend before drinking because it separates a bit.

Notes: Occasionally we add other things when we have them, like a few baby carrots or pieces of pineapple!
If there are strawberries in your berry blend, you can do 1 1/2 cups instead of 1. My berry blend is only raspberries, blueberries, and blackberries.
If you don’t have a smoothie setting, any setting will do. Just make sure it starts at a low speed and accelerates as everything blends together.
